Creamy Coconut Chia Pudding with Bananas
Ingredients
- 1 can light coconut milk
- 1/2 cups shredded coconut (reduced fat, unsweetened)
- 4 tablespoons chia seeds (white if available)
- 2 tablespoons maple syrup
- 1 teaspoon saigon cinnamon
- 1 teaspoon vanilla extract
- 2 bananas (sliced)
- 1/8 cups flaked coconut (toasted)
Directions
In a medium bowl or jar, combine coconut milk, shredded coconut, chia seeds, maple syrup, cinnamon, and vanilla extract. Stir or shake until well blended. Place in refrigerator and leave to soak overnight or at least 3 hours. Serve with sliced bananas and toasted coconut flakes. Serves 4. Adapted from Petite Kitchen | |
