I couldn’t be more excited about my nephew’s choice in birthday theme this year – Pokemon, and a pikachu cake!As is tradition, my SIL and I made this together, and it was SO fun.
To create pikachu, we baked 2 round cakes, one for pikachu’s head, and then we cut the other into his ears. We covered the cake in a sunny yellow crumb coat, then pulled out the trusty star tip to cover. To create his face, we cut a template out of paper, and once we had it perfect, cut those shapes out of thinly rolled fondant.
Birthday boy and his friends loved his cake, and the adult Pokemon Go fans all did too!
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup salted butter
- 1 1/4 cup granulated sugar
- 1/2 cup brown sugar packed
- 4 eggs large
- 1 tbsp vanilla extract
- 1/2 tsp lemon extract
- 1 cup buttermilk
- 1/2 cup lemon juice
- 2 tbsp lemon zest

Whisk together flour, baking powder and salt. Set aside. Using a stand mixer, beat together butter and sugar until smooth and creamy. Add eggs and extracts and beat until combined. Add dry ingredients and mix until incorporated. Add milk, lemon juice, and zest, until combined. Do not overmix.
Pour into 2 greased and lined 8" round pans and bake at 350 for 40-45 minutes or until a toothpick comes out with only fine crumbs.
Allow to cool completely before decorating.
