One of my coworkers is known for his love for whiskey, so when his birthday rolled around and he didn’t have any specific requests, I had to get a little creative. Eventually, I honed in on the concept – fudge brownies, iced with a little kick from whiskey!
- 1 cup salted butter melted
- 2 1/2 cups granulated sugar
- 1 tbsp vanilla extract
- 4 eggs large
- 1 1/2 cups flour whole wheat preferred, all purpose OK
- 1 cup cocoa powder
- 1/2 tsp salt
- 1 cup chocolate chips
- 1/4 cup salted butter
- 1/3 cup cocoa powder
- 1/3 cup half and half
- 2 tbsp whiskey or other spirit
- 3 1/2 cups powdered sugar
-
Preheat oven to 350. In a large bowl, mix butter, sugar, and vanilla until smooth. Whisk in eggs one at a time, beating well after each addition. In a separate bowl, stir together flour, cocoa and salt. Add to butter mixture, and stir until combined. Pour and evenly spread into a 9x13 pan lined with parchment or foil. Bake 25-30 minutes, shorter for gooier consistency.
-
Melt butter in a small saucepan. Whisk in cocoa, half n half, and whiskey. Add sugar 1/2 cup at a time, mixing well after each addition. Pour over brownies immediately.
