Jalapeño Egg Salad

Ingredients

  • 6 eggs (large, hardboiled and peeled)
  • 1/4 cups chives (or green onions, chopped)
  • 1 jalapeño (seeded, diced)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons dijon mustard
  • 1/8 teaspoons cumin
  • salt (to taste)
  • black pepper (to taste)
  • cayenne (to taste)

Directions

In a large bowl, mash hardboiled eggs with jalapeño and chives. In a small bowl, whisk together oil, lemon juice, mustard, and cumin, then add to egg mixture and mix well. Chill. Season to taste with salt, black pepper, and cayenne.
