Jalapeño Egg Salad
Ingredients
- 6 eggs (large, hardboiled and peeled)
 - 1/4 cups chives (or green onions, chopped)
 - 1 jalapeño (seeded, diced)
 - 3 tablespoons olive oil
 - 2 tablespoons lemon juice
 - 2 tablespoons dijon mustard
 - 1/8 teaspoons cumin
 - salt (to taste)
 - black pepper (to taste)
 - cayenne (to taste)
 
Directions
| In a large bowl, mash hardboiled eggs with jalapeño and chives. In a small bowl, whisk together oil, lemon juice, mustard, and cumin, then add to egg mixture and mix well. Chill. Season to taste with salt, black pepper, and cayenne. | |
